If you are looking for an easy quick dish to cook after a long day from work or on the weekend for your family or friends, this easy mussels one-pot rice recipe dish is your girl. I have made this dish countless times and it always comes out flavourful and delicious. this dish is savoury, rich and aromatic.

- 60ml of Rapeseed oil
- 10 grams of Butter
- 1 Medium red onion (Chop into small pieces)
- 3 Cloves of Garlic(Chop into small pieces)
- 500ml of water
- 1 Teaspoon of herb de Provence
- 2 Bay leaves
- 1 Teaspoon of black pepper
- 1 Teaspoon of chilli flakes (Optional)
- 2 Teaspoon of Knorr (Aromat) seasoning Or Chicken bouillion powder of your choice
- 1 Knorr stock
- 250 grams of frozen Mussle
- 350 grams or 2 cups of Rice (Thai hom Mali fragrant rice) Green dragon brand or Jasmin or basmati rice (Wash the rice)
- 1 Fresh Lemon (Garnish) Optional
Instructions
- Begin by heating the oil and butter in a medium cooking pan over medium heat. when the oil is hot and the butter has melted, add the chopped onion and garlic into the pan and saute until translucent. This will take about 3 minutes depending on how hot your oil is.
- Next, add the water to the pan then add the knorr stock, herb de Provence, bay leaves, black pepper, chilli flakes and the knorr seasoning (Aromat) then stir and taste. The seasoning should be perfect and not require more, however, if you do please adjust to your taste. Now add the mussels to the pan leave them to simmer and release their beautiful aroma to the broth for 5 minutes.
- Now add the washed rice to the pan and gently stir, then cover the pan with a lid and leave it to cook for about 10 minutes. By now the rice would have absorbed most of the broth, reduce the heat to low and leave to cook for another 10 minutes. Now put the heat off and leave the pan with the lid closed for 5 minutes.
- Lastly, open the lid, and you will be welcomed with a beautiful aroma of cooked fluffy rice with mussels. Fluff the rice and serve with a side of salad. However, you can also serve it with fresh lemon wedges and Lee Kum Lee Chiu Chow chilli oil on the side. Squeeze the fresh lemon on top of the hot rice and add the chilli oil and viola. Lunch or dinner is served, Bonne appetite.
