This quick and simple salad is inspired by a Gambian smoked fish salad recipe called "Gurum soup". This Smoked Mackerel Salad is fresh, delicious, and nicely balanced with citrus dressing and the sweetness of the vegetables. It is packed full of nutrients and perfect for a quick lunch.
This salad will pair very well with my Easy Mussels one-pot rice recipe, do try it out and let me know what you think. This Salad is perfect for the summer as a side dish or a quick meal.
Ingredients
- Smoked makerels Fillets
- Radishes
- Pomodorino baby plum tomatoes (Any plum tomatoes )
- Baby Sweet peppers
- Shallot
- Mini cos lettuce (Any lettuce would do)
- Jersey Royal new potatoes
- Avocado
- Lemons
- cucumber
- chilli flakes
- salt

Instructions
- Wash all the vegetables and drain the water. Cut them into pieces and set aside.
- Now put them in a big salad bowl, add all the vegetables. Lastly, add the flaked mackerel and lemon dressing. Toss them together and serve.
Storage
Eat it within a few hours after preparing the dish, due to the lemon acidity if left for too long the lettuce will start to wilt and it will lose its crunch.

Ingredients
- 2 smoked mackerel Fillets
- 8 small radishes
- 12 Pomodorino baby plum tomatoes (Any plum tomatoes )
- 3 Baby Sweet peppers
- 1 Shallot
- 8 leaves of Mini cos lettuce (Any lettuce would do)
- 7 Jersey Royal new potatoes
- 1 medium ripe avocado
- 2 Lemons
- 1 Medium size cucumber
- 1 Teaspoon of chilli flakes
- Half a teaspoon of salt
- Pumpkin seeds (Optional)
Instructions
- Begin by washing all the vegetables, drain the water and set aside. Now place your potatoes into a cooking pan, and add an inch of water with half a teaspoon of crystal salt (Kosher salt). Bring to a boil in medium heat for about 12 minutes or following the manufacturer's advice. When the potatoes are cooked, drain the water cut them into halves and set aside.
- While the potatoes are boiling, Now, we start preparing the remaining vegetables. Now cut the tomatoes in halves and set aside. Slice the radishes set aside. cut the sweet peppers into small slices then set aside. Slice the shallot into thin slices, then set aside. Shred the lettuce into small pieces and set aside.
- Now, squeeze the lemon juice into a small bowl, add the chilli flakes and salt, Stir until combined taste and set aside. Next, remove the skin of the mackerel fillets, then flake them into medium sizes. Cut your Avocado, remove the skin, cut into small pieces and set aside.
- Now we assemble the salad. In a big salad bowl, add all the vegetables together, topped with the smoked mackerel flakes. Add the lemon chilli dressing and toss them together. Taste the seasoning and adjust the salt according to taste. It is ready for serving and garnished with pumpkin seeds.
Notes
Olive oil: I omitted the olive oil however you can add a teaspoon to the dressing if you wish.
